Mike we hit the gravity dead on at 13.25 gallon in boil tank as i thought all the hops would collect a half gallon water an i was right...and he is going to do one with the recipe dry hops but longer like you said and the other with half the amount...and it sure smelled good while brewing...i just cant see how eople can afford to brew in the citys...but i did get a good discount after telling the owner i owned a store in ND..he was amazed that we even had a store with our population as it is..2 pounds of hops in this brew should be like all the ipa's we drank there...and when going to the pubs the patrons were so knowledged in beer and really like going to different places to just drink the differrent brews and are not affraid to have something they have not had, even if its not favorite style...and the liquer stores are like our walllmarts[well the two i seen anyway}.//see ya tonite...i hae some beers to share...Jeff

Just a couple quick notes on the recipe. If you are shooting for 11 gals, I would sparge more and then you can avoid the "add water to get to 11 gals after wort is cooled" step. I would start at a minimum of 19-20 gals depending on if you use a hop sack or not. I don't and i leave a giant trub cone in my boil kettle.

The second thing I would do is dry hop longer than 3 days. I would give it a minimum of 5-7 days.

Just my opinion though. This is going to need some aging with 6lbs of additional sugar as well....

Mike
